When cooking turn preheat the pan for a minute or 2 before adding oil/food. It allows the "pores" to close on the steel and create a nonstick like surface.
For eggs, I'd have one nonstick pan. You can cook with stainless, but that's the one thing where it's easier not to.

Maintenance isn't too bad, just let it cool down a bit for washing, barkeepers friend is good for getting rid of any minor discoloration or anything like that.
As far as non-stick, I no longer own any. One trick I learned with quality stainless is to heat the pan then give it a light spray of non-stick even if you're going to use butter or oil. No need for non-stick pans.
btw... not all Tramontina are the same. They do sell a cheaper Chinah set that is only triply on the bottom with glass lids. Those are junk. The full triply made in Brazil are the ones you want (this post is).
Love them both. Have gotten really good at light oil spraying & pre-heating my tri-ply for cooking with no stick- including scrambled eggs.
Also, besides not liking the material used in non-stick, and worry about scrapping the coating- eventually the non-stick starts to fail. My tri-ply set is over 10 years old and still rock solid.
BTW, if you're looking to have a non-stick frying pan in the house, take a look at Tramontina's PRO Series. It's been my favorite go-to non-stick for general use.

PLEASE, PLEASE, PLEASE NOTE: Stainless Steel cookware IS NOT NON-STICK and should not be used as such, in many cases it's actually the opposite of non-stick. IF your are new to cooking or cooking with Stainless Steel multiply cookware of ANY kind, please research how to use it effective on YourTube.
The number one complaint of cooking on "clad cookware" is non-stick performance and it's almost always because those folks mis-understand the cooking attributes of stainless steel cookware.
