This is a good deal compare to my order a week ago for $5 less. I have done homework before I bought this for my kid. To answer many questions above:
1. Memory is upgradable to 64GB (2x16GB). Any DDR4 is fine. The spec you read is "up to". Slower memory but with less latency is not going to make a difference.
2. No usb-c
3. External monitor is limited to 1080P. This is dell article blame motherboard and it is by design.

However, some research showed people using Intel driver be able to go 2K/4K. So it may be dell video driver limit resolution

4. Intel i5-1235U vs AMD 5500U basically have no difference on CPU benchmark. AMD is little better on gaming due to higher GPU clock speed. Intel is probably has better battery life due to efficiency CPU cores. If price is the same, you can choose either depending on your use case. If AMD is $100 more, choose cheap Intel.
5. Intel UHD and Iris Xe are basically the same. Iris Xe MUST to use dual channel memory. So with one DIMM 8GB, you will get UHD. Two DIMMs you get Iris Xe. It is the same CPU. Just marketing term to have you buy more memory from Dell to use Iris Xe.
6. It ships with Intel AX201 (wifi6+BT5.2). Nice. No need to replace dell crappy Wifi-BT card.
7. This laptop has a 2.5 slot for SATA SSD

I plan to wipe it clean with windows 11 pro no bloatware. Install 16GB(2x*GB) to get Iris Xe and replace with good NVME 512GB(most likely dell ships DRAM-less 256GB nvme) since I have spare parts to upgrade. Install intel driver to see if it can go beyond 1080p external monitor. If you don't have spare parts, the better configuration with 16GB/512GB goes on sale around $485 based on slickdeal or you find elsewhere for parts.

If you have no idea what I am talking about, you should avoid it.
Unfortunately, I haven't found any laptop configurations available under this post with a backlit keyboard. That kills the deal for me.

Resolution
Install the latest graphics driver and update the Intel Graphics Command Center application via the Microsoft Store.
Note11th Gen Intel® Core™ processors (codenamed Tiger Lake) in single-channel memory configurations will default to less than 80 EUs, in alignment with Intel® UHD Graphics branding. In this configuration, it will always show Intel® Iris® Xe Graphics in the Operating System. To properly enable Iris® Xe Graphics the system must be in dual-channel memory configuration. Consult with your computer manufacturer for more information.

Was anyone able to remove the the screw to swap the nvme drive? I can't unscrew the screw to take out the metal bracket ("thermal plate) so I can't remove the 2230 nvme drive to add my own Frown . the online manual says it's a m2x2 screw

I was using the same PH1 screwdriver that I used for the case screws but it didn't work for it. Tried PH0/00/000 (00 and 000 for different screwdriver) and none worked too. PH00 seems too big still while PH000 I can't turn it, screw looks a little damaged now and hasn't turned at all Frown

edit: had some screw pliers and managed to remove that screw thankfully. had a spare m2 screw from when i asked asrock for some and that one actually let me use screwdriver on it

Go buy/use 3200 RAM. 3200 RAM is compatible with systems that support only 2666 speeds so even if this system is limited to 2666 memory speeds (which I don't know if that's the case), the faster RAM will still work. And since there's no real price difference for the two speeds, might as well buy the 3200 sticks.
