These all seem about the same and the one that I have which looks about the same is not super accurate based on boiling temp and a brewers thermometer which is fairly accurate.. mine reads about 3 to 10 degrees f low depending on temp.

That's close enough for some but not for others. For me just to check how close my wort is getting to boil it's close enough. Plus with a small amount of mental math you can get a little bit closer to the actual temp, if you have that much effort available…..

Humans are dirtier than pigs, so I would think cooking the meat to 175 deg for well done is recommended to kill all bacteria.

I don't brew anything so maybe I'm misreading what you're trying to do, but these types of thermometers are not good on: liquids or reflective (stainless steel) surfaces. Because of how they work, it doesn't produce an accurate result. In fact, if the liquid is clear enough, you're probably reading some of the temp of the actual container itself, not the liquid.

Mine are 1-2 degrees off but in a consistent direction. If they were all over +-3 degrees yes that would be much more limited use. Most of what I do is relative to same activity before or "are we close to boiling" .... where1 or 2 degrees does not matter, when it does I know what the number really means.

These inexpensive models are okay if you just need a general temperature check range. If accuracy is paramount, get a Thermoworks unit. Expensive but gives uniform proper temperatures.
