I havent found a way to simple this up but would love to if anyone knows what essential bit I'm missing because this is really cumbersome and, frankly, $50 seems like a pretty low threshold!

I am not sure I understand where $50 comes into the equation, especially if you're paying online. I could see, possibly, that the stores would limit an online, pay in store order to prevent no shows and excess pizza being ordered and not paid for.

There is a maximum of 2 gift cards per order if you are not doing an advanced order on line. Or if they would allow limitless gift cards per order this wouldnt be a problem.
If I try to buy more than $50, it will not let me "pay in store" (to use as many gift cards as I need to use). My gift cards are $25 at most so $50 is the most I could do on line anyway, if I were only using completely full gift cards.
Or maybe all of this is set by store and what doesnt work for me would work for you. But, for me, this is a real PITA. I saved around $60 on 7 pizzas retail so it was worth it but this was a smaller order compared to what I have coming up throughout the summer.

I did something similar one time, and they gave me the online order price as an accommodation, so this might be an option.
