That stuff is 2 to 5 times more expensive. A pound of the most expensive stuff is like $78 a pound if it's almost five dollars an ounce. Damn.

The amount of sugar in this stuff is nuts :\
  • Apple pie is around 15-20% sugar by weight.
  • Ice cream is between 15-25% sugar by weight.
  • Jack's Link Jalapeno flavor is 21% by weight.
Ouch.

EDITED TO ADD:
D'oh, sorry about that; I originally conflated the single serving weight with full 3-serving pack amount of sugar. Actual sugar amount is ~21%, not 64%. Corrected above!

Your math is off somewhere. Calories from carbs is 28 out of 80. Even total carbs by weight is 7g out of 18.5.

That said, it is still way too many carbs for beef jerky.

That said, spices are very low in weight, volume and calories so whichever metric, it doesn't make sense.

Yep, you're absolutely right; apologies! I conflated the single-serving weight with the full-3-serving measurement of sugar.

Actual amount of sugar is 'only' ~21%. So just about the same % of sugar as ice cream and apple pie, not 3X the amount. Still nuts, though.

Tip: If you want to control sugar, you can make your own jerky from eye of round.. Saves money if the beef is on deep sale or clearance. Expect to get about 4-6oz of jerky from a pound of beef, depending on how dry you like it.

If you figure $5/lb for eye of round on sale (and you can probably get it lower), that's about $1/oz plus spices and sauces after it's fully dried, in line with the cheapest jerky deals.

Good advice. We can quite often find eye of round or london broil cuts for about 4$ per lb on sale. I usually do batches of about 10lbs of beef, netting about 3lbs of jerky. I'm a big fan of Soy Sauce/Sriracha in my marinade, along with the usual (pepper, garlic, onion etc)

I also do some batches without any seasoning or spice as a tasty, healthy treat for my dog.

I usually portion the jerky into 1lb bags, vacuum seal and freeze until needed, otherwise I will eat it all too fast Smilie
