Note that the most limiting factor for growing indoors is almost always insufficient light, and most mint varieties grow best outdoors in full sun. If you want your 3ft wide planter filled up pretty quickly, you'll want to either buy 3-4 mint plants or get just one and learn how to take and root cuttings (mint is super easy for this).
And for varieties, I recommend *against* "pineapple mint," or any other variegated variety, because they need even more light and grow slowly. If you like the scent of creme de menthe, you might see if you can find Corsican mint, which is tiny and looks almost like a moss, but has a strong minty scent and does better in indoor light than most varieties. Simply brushing your hand over it makes your hand and even the air smell of creme de menthe.
And as with all potted plants, don't water by whether the potting medium is wet, not by some arbitrary schedule. Plants use more or less water depending on the season, even indoors, so even the same plant has different watering needs at different times of year.
