I think you need to setup the switch and get a Nintendo account first. Every parent goes through this every Christmas. You don't want to open the switch, but Xmas morning comes and now you have an hour or so for setup and installs.

This. Please open your kids console and connect to the internet, update, install games, update, and setup parental controls (if you're inclined to). This can literally be hours of waiting for your kids otherwise.

Don't forget that the Switch 2 comes out sometime next year in case you want to wait for that.

You will want to open the switch and do the updates/account setup before hand. Then once you have the account you can but games online.
