When you go downhill on unpaved trails, it is common and highly recomended to "float" above the seat, not sitting on it, to allow for the bike to move independently from your...core. And this is recomended even with full suspension bikes, even more for hardtails and rigid ones.
When standing without a dropper post, you will typically get some distance from the saddle to your bum, but not that much. Furtheremore, this long mast between your legs is inhibiting you from leaning the bike aggressively - needed for engaging the side knobs and allow for fast cornerng - without forcing your body to start leaning too. And when you lean with the bike, your center of gravity start being too far from the BB/Center of the bike, and that's unstable. No, bicyles are not super-motos, you should not lean outside the bike you are always OVER the bike even if the bike itself is leaned heavily.
The longer the dropper post's drop, the more room you have to move around the bike when the saddle is out of the way. That of course, should not compromize that ideally, the top of the dropper post's travel, should be your ideal saddle height. To calculate your max dropper travel, you should measure the height of your exposed seat post, from the seat tube collar to the saddle rails. All droppers have what is known as "stack height". it is not always published but it is the length/height from the dropper post's lower collar, to the middle of the sadle clamp, when the dropper is fully compressed. The max dropper travel you should install is (current seat post height from top of frame's seat tube to the saddle rails at proper saddle height) - (dropper model's stack). Say you have 210mm seat post exposed now, the new dropper's stack will be 65mm => max usable drop travel will be 145mm. But for non adjustable droppers, typ. 145 is not an option: it goes 100-125-150-170-200 etc, so the wise choice is to go for the 125 to give it some room for adjustment.
With adjustable droppers, ppl would often go for the 150 and limit the travel to 140 (if 10mm increments are offered) or 145 (if 5mm increments are possible).
Also, this is the process for what happens outside the frame: there are some frames that due to the way the seat post is bent or because it has water-bottle mounts (nutserts/female threads insde the seat post), you might be unable to insert the seat post past some point, so even if in theory you hade enough room above the seat collar, you cannot work with a very long dropper because of the situation below the seat collar. All of this is VERY frame but also bike size specific, so ...do not blame ppl for recomending things sight-unseen.
In a nutshel, not every one rides in a way that needs a dropper, but once you do get used to one, it is hard to do without for more spirited trail riding. And yes, there are a couple of combination dropper/sus posts, but those are rare and not in this deal.
