How do these hold up after a year, do they sag badly?

Sounds like the bracket doesn't account for normal stud spacing per reviews. Thankfully newer TVs are pretty light and some anchors sound like the solution to the problem. I've had a similar mount purchased from Walmart that works pretty well 2 years later. My TV is 32" and the bolts are there to tighten if it becomes loose over time and can fix the tv tilting down if that were to become an issue.

They don't sag. I have one in an office and one at home. The only "downside" is that I just don't end up using the moving/tilting function as much. I replaced a simple thin/flat mount at home with this one, and it's all the same to me.

NO ! They need 1/4" lags at least 1"-1 1/2" long with washers minimum… at least 4 … depending on the weight of the TV

I have this exact mount professionally installed for Samsung 85" tv 120lbs this mounts up to 130lbs it tilts outward for such a huge tv. Smaller size panels may be the perfect spot

Is there a gap between the plywood boards & the wall... so you can get the bolt head, or nut & washer, behind the board?
Sorry, for some reason I first visualized the plywood being flush against the wall.

No… lag bolts have Points and do not accept nuts.. the washer slides over the bolt to allow you to tighten the bolt and not damage the mount

You screw the plywood directly to the wall with 3" screws INTO the wall studs .. minimum 2 per stud top and bottom of the plywood panel… the panel can be as small as say 24" wide 16" ht.. depending on the size of the Actual mounting plate

You need to hit at least TWO studs… depending on the weight of the TV

If its for your own home and if you're handy enough, its worthwhile to open up the drywall just a bit, mount a 2x10 across the studs with deck screws and close the drywall back. I had to do that in 3 of my rooms where I have mounted the large panel 65", 75" and 75" TVs. The work included mounting an electrical outlet to hide all wiring behind the TVs.
