This is an excellent game, HOWEVER, if you've ever played any Legend of Heroes games, you'll notice that a lot of the quests are the same in every single game, so I wouldn't recommend trying to play this if you've recently played any other Legend of Heroes game. Also, as mentioned, this is just the first of three games. It ends on something of a cliffhanger which is where the second game picks up.
The statement that each has its own self-constained story like Final Fantasy is not really true. Final Fantasy games are usually separate worlds. These games are same world, progressing chronologically throughout the continent. Very hard disagree on the statemet that play order doesn't impact ability to enjoy the other games -- Getting a heartfelt closure for a character from the Sky trilogy within the Crossbell arc greatly impacts player experience if you actually knew the character.

Personally, I think starting from the beginning is the best experience possible IF this is the type of game for you (into heavy reading, don't like to miss a beat, enjoy world building but won't mind a slow start). Your statement of needing old-school RPG goodness tends to suggest to start with Sky tbh. I get that some people find recommending starting with Sky trilogy a bitter pill given its dated graphics. They are remaking the first game this year, but even then, you'd be left at the cliffhanger leaving you wanting more anyway so you'd have no choice but to jump into the dated SC. If you insist on starting with something more modern, then the suggestion is to start at the beginning of an arc. For instance, if you want to play the crossbell games, don't start with Azure.

The chronologic order grouped by arcs:

Sky trilogy:
Trails in the Sky FC
Trails in the Sky SC
Trails in the Sky 3rd

Crossbell arc:
Trails to Zero
Trails to Azure (chronologically overlaps a bit with Erebonia arc but no reason not to play this before cold steel).

Erebonia arc:
Trails of Cold Steel 1 thru 4

Reverie
Calvard arc:
Daybreak
Daybreak 2
Just to add on to this in regards to Legend of Heroes games - these games can have almost have too much dialogue and world building to the point it breaks the flow of actually playing the game. I just recently played through Trails from Zero after not playing any of the franchise since the cold steel series and at one point there was a little over an hour spent just reading dialogue. If you want more action than reading in your rpgs this series might not be a good fit for you.

It really doesn't matter. It's sort of like Final Fantasy or Tales games, where each one is its own self-contained story. There's some overlap with wider game world events, and occasionally characters from one game show up in another, but you can pick up any of the Legend of Heroes games, play them, and it won't really impact your ability to enjoy the others.

Don't have a steam deck, but these games are both pretty old and weren't all that graphically demanding even when they were new. The only potential issue would be if it uses some API call that Proton doesn't emulate.

This is getting a complete remake, btw.

The Legend of Heroes series is one of my all-time favorites. I haven't played the Trails in the Sky games, but I've played Trails to Zero, Trails to Azure, Trails of Cold Steel 1-4, Trails Through Reverie and am currently playing Trails Through Daybreak 1. These games won't be for everyone, since there's a ton of dialogue, but I've enjoyed all the stories.

Yeah. I got it start at least on Deck but it was a graphical mess. Unless some new proton build has improved it, a year or two ago it definitely would not be considered playable.
