I was going to get 8 modules of ECC UDIMM (16gb each).
Seem like this would also be ok? I'd be doing 4 sticks instead of 8 though since the motherboard only supports 128gb

This is the Absolute end of the cheap DDR4 memory. By the end of the year, this will be $150, as companies have stopped making DDR4 memory. Or at least the big name companies (SK Hynix, Samsung, and Micron). Since most people have moved over to DDR5, they are looking to clear out stock at this point.

Unfortunately there's no really great gaming/performance DDR4 left at this point (all the ultra low CL stuff is out of production, certainly no more Samsung B die being used for DDR4)

Most motherboard's aren't quad channel even if they have 4 slots. So you could more affordably upgrade to 2x32 GB. Also 32GB sticks are faster than 8 or 16 GB sticks because they're dual rank.
