My experience after owning several since launch has been that it takes around 3-4 years for the larger variant to stop lasting through the day if you use it to track workouts and spend a lot of time outdoors. Only once have I actually had a battery go bad, and I spent the $100 to get it replaced and handed it to another family member. It made sense at the time because a used stainless steel 6 was still worth more than that used.
Only get insurance for things that would be financially devastating: house, boat, car, life… for small items you should self insure, you'll be better off
Bought wife hers 4 years ago. Battery reduces similar to a cell phone i'd say. Nothing Applecare would cover as far as I know.
Not saying AC is a bad idea, but wouldnt get solely for battery coverage.

? about the cellular model. Will it have its own number like a cell phone and I can make/receive calls from the watch itself?
Or will it be linked to my cell phone number and I can make/receive calls from the watch when my phone is nowhere near by? (Phone at home, watch with me elsewhere)
It will be linked to your iPhone's number but if you subscribe to a cell service you don't need to carry your iPhone with you to receive and make calls on your watch.
