1) Local Number Portability (LNP [wikipedia.org]) is required by law to allow you to switch carriers. Most people prefer this method.
2) You could port your "main" number to Google Voice and change the forwarding number as you change providers and phone numbers. If you want to leverage RCS or iMessage, this isn't as smooth a process as I don't think GV supports either (although it's been quite a while since I've messed with texting on my GV number since I've moved out of the Android ecosystem).

T-mobile's network is trash everywhere around me.
Totally depends where you are. There's a lake my son and I fish at in the middle of nowhere. On Visible I barely have any service there. When I was on Mint last summer I always got 4 bars and 5g.
I'm currently using that plan and I'm very satisfied
