I recently bought four of the bifacial design and have been pleased with them. I think the peak performance I've seen from a series parallel combination of the four was about 700 watts out of 800 theoretical max, but it has been typically less than that.

You mean bypass diodes, but you're describing blocking diodes. How bypass diodes work is described in the link above. Blocking diodes are (optionally) used when connecting solar panels in parallel to prevent backflow from unshaded panels or poor charge controllers

Directly facing the sun and properly angled? How hot is it? How are you measuring? There will be loss at the MPPT and if you're using an EcoFlow or something the numbers shown are after that loss. Figure at least 1-2%.
