420J is a very soft knife steel and will not hold an edge long at all. It will be easy to get sharp and touch up, but you will have to do it rather often. It does offer good corrosion resistance, flexibility and durability as the steel of a knife designed for the kitchen should, but it is not a premium steel by any stretch of the imagination. I'm not saying it's a bad steel, just it's at the lower end of the quality spectrum and folks should understand what they are getting. I would not want an EDC pocket knife made out of this steel, but it's not a terrible choice for a kitchen knife. No way I'd pay anything close to $75 for this set, the quality of the deal at $45 is debatable.
