Freezing temps? Plastic gets brittle and can snap
Parts get hot? Plastic softens and stretches (loses tension)
Parts get really hot? Plastic burns
Parts in sun? UV rays weaken plastic which breaks in one season
Plastic sheds microplastic particles and hormone mimetics which are bad for nature
Plastic is made from petroleum products which we need to minimize
Plastic zips are only partially recyclable, at best, while scrap steel is easily recycled
Steel is better on every count except two:

Plastic less likely to cut fragile materials
Plastic is cheaper

And you can mitigate the first drawback in a lot of situations by shimming something between the ziptie and the fragile surface, such as a cut up bicycle tire.
