* As a side note, MSG is actually healthy. First of all, decades of research around the world have found no ill effects. The so-called Chinese Restaurant Syndrome was apparently a joke. The supposed Chinese physician who reported the case never existed in any medical registry. And several experts noticed that his name seems to be a pun. Unless you have a rare allergy to MSG, you shouldn't feel any side effects.
Second, using MSG actually helps people lower their sodium intake. How can that be possible, you ask, if MSG has sodium? Well, a Swedish study found that adding MSG to soup allowed tasters to use 30% less salt without sacrificing taste. The amount of sodium in the MSG was far less than what's in the salt you leave out. The net result was less sodium in the soup.

Ingredient Purpose Comment
Beef Primary protein source Generally fine, assuming it's not low-grade or contaminated
Beef Hearts Organ meat, added protein/fat Nutrient-dense if quality is high; organ meats contain CoQ10, iron, B12
Water Moisture No issue
Salt Preservative & flavor Fine in moderation; excessive sodium intake is common, so balance in the diet matters
Flavorings Generic term for spices/aromas Unclear contents; could be natural or artificial. Transparency would be better
Lactic Acid Starter Culture Fermentation agent Often used in cured meats, helps preserve and develop tangy flavor
⚠️ Questionable or Low-Quality Ingredients:
Ingredient Concern Details
Reduced Lactose Whey (Contains Milk) Allergen, filler Adds protein, but can be a cheap filler and allergen for some
Hydrolyzed Corn Protein Source of free glutamate, possibly allergenic Often used for umami flavor (similar to MSG); may be a hidden source of glutamate
Corn Syrup Solids Cheap sugar additive Adds slight sweetness; highly processed and contributes to glycemic load
Dextrose Simple sugar Often used in curing meats; contributes to sweetness and browning; minimal health value
Sodium Phosphate Texture and moisture retention Common in processed meats, may stress kidneys with chronic high intake
Sodium Erythorbate Antioxidant preservative Helps preserve color and reduce nitrosamine formation, but synthetic origin
❌ Best Avoided / Known Toxic Concerns:
Ingredient Toxicity & Risk Profile Concerns
Monosodium Glutamate (MSG) Excitotoxin in high doses Controversial: Some people report headaches, flushing, etc., especially with chronic intake. Can overstimulate neurons in sensitive individuals
Sodium Nitrite Carcinogenic nitrosamines form under heat Linked to increased risk of colorectal and stomach cancer in processed meats. Used to preserve color and prevent botulism but carries real risk
BHA (Butylated Hydroxyanisole) Synthetic antioxidant Classified by IARC as "possibly carcinogenic to humans" (Group 2B)
BHT (Butylated Hydroxytoluene) Synthetic antioxidant Similar to BHA; animal studies link to liver/kidney effects, potential endocrine disruption
Potassium Sorbate (in solution) Antifungal preservative Considered low-toxicity by FDA, but some studies suggest genotoxicity in high doses. Not ideal for frequent consumption
