You could. I'd alternate screwing them back-front (ex. bisque-back, black-front, bisque-back, etc). Such detail of the seams might look better than "horizontal roof shingles" of just overlapping...

Wonder if I could overlap the screw holes onto each other and plaster these throughout the kitchen, maybe paint over it to get what I want, and get a continuous space seems like no glue or grouting...

Use above and behind your stove. More durable and easier to clean than if you have just a painted wall or tiles with grout.
