Scratch that, even at 300F setting my oil smokes... This has a smoke point of 400F and never have any issue cooking on my ceramic stovetop. Is my unit defective?

Got my unit. Really impressed with how quickly it heats but I seem to burn everything on it. Even my canola oil starts smoking rapidly at the 350F fry setting. Is this normal?

This would not work for the boil. I'd be surprised if it would ever get it to a boil at all. It certainly will not give 7+ gallons a good, rolling boil with the lid off. You might be able to use it...

I think you would be fine, I would not trust the temp from the bottom anyways.
Put it on 400 and turn it off when it hits ~375 with a temp probe.
A similar model on Amazon (not pre-programed)...

I would be concerned with weight. Also, most glass top ranges are 3000 to 3600 watts, this would take twice the time to boil.
