I know this deal is over, so sorry for the lateness. Enamel prevents the oxidation that adds iron to the food being cooked. The benefit is still up for debate.

Good question. We bought a GE Profile range a number of years ago. I looked at one in the store last year or so, and saw that the interface had changed to this weird LEDs in-a-circle jazz. I like...

IMO, no. Here's another issue with this pan. The raised grates are entirely too shallow to give you any benefit. If you want a cast iron grill pan make sure the grate part is raised VERY high to...

Why do you need a smooth cast iron? I have a 10" lodge for the last 2 years, cook with it daily and make omelets on weekend. Only problem the 10" lodge is too heavy for me to slide and fold the...

Yes. And induction too. With regard to induction (we use induction will never go back) our 7 qt cast iron cocotte heats up too hot to touch within 15s. We use cast iron pots pans cocottes on...

You can't really get anything but a lodge I don't think. Nobody makes them. You can get an old griswold one for $100ish. I get cheap old no name brand ones. I got one for $5. It's from the 80s...

When I first typed that up I didn't have that qualifier in there but then I went back and added it since I'm not a cast iron pan expert and figured there might be some that were hand finished and...

To be honest I don't see any more expensive new ones that are smooth. Good thing about then is that they don't get bad. I have one from sears that is ancient. It's great!

If you want it glass smooth you can hand sand it (harder with the lines in the bottom of this one) then re-season it. This roughness is pretty common among most all recently manufactured cast iron...

It's no help. The pans are too rough. You need to sandblast it or smooth it out then season. It'll be great then. Using smooth bottom ones are the only solution. Buy an old one or find out how to...

Honestly I hate lodge pans. All new cast iron is shit to me because it's so rough. I like older smooth bottom pans.
