I cut the pork into thirds, maybe 2 or 3 pounds each.
Put them in individual ZipLock bags, and put them in the freezer. I've never had a problem with freezer-burn.
You can use these in any recipe...

Can't say I've ever bought meat at Costco as Meijer/Kroger has better pricing.
I would agree that Costco baked goods do go bad quickly, not good when you have to buy a dozen muffins at once.
