To be fair, the sharpener in the video is a completely different model. He’s using the Edgecraft 35 Sportsman, not the Chef’s Choice Trizor XV in the OP.

This model scratched the hell out of my Wusthof Ikon blades. It's ridiculous that they recommend placing making tape on the knives. It's garbage if you ask me.
