I find the 8" chef staying in the drawer more often since I picked up the 6" chef. Can pick it up on Amazon right now for $100 with a paring knife that runs about $40 if purchased separately

I agree with this. Great knife, but the bolster does get in the way of a whetstone for sharpening. The bolster does give great hand feel IMO though.
