I had the same problem and uninstalled the browser. That seems liked the only option since there were none to turn off auto start, naturally.

You'll have to upgrade to server 2012 first, then 2016, and then 2019. There's minor differences between 2016 and 2019.

IDK if it's a Defender or Windows 10 feature but you can turn on protected folders to mitigate ransomware. Backing up files is also a good idea.
