Played battletech on a ryzen 5 2500u and was shocked at how slow it was. Playable but irritatingly sluggish (missile launches lag, dropships lag like crazy, etc). The optimization must be awful....

I'd argue the opposite. I also have an elitebook from work and bought two of the Costco units. Beyond the fan noise and airflow, there's no distinguishing build differences that I'd notice...

Seems similar to the New Egg deal but more SSD and RAM. Is the extra 256GB and 8GB ram worth $69 more than the New Egg one? Never mind. I guess I will have to go with the New Egg one

Not a good choice. You need more than Ultrabook or U series processor for that. Look for H series Quad or 6 Core CPU based laptops.
