Good knives. I use one for hunting. The blade may rust a bit if you don't take care of it, but that's your own fault. They come very sharp. I have a large scar on my knuckle for evidentiary purposes.

No. They're Scandi grind, which is unlike the vast majority of knives. Better to practice on a low-cost knife that has the typical grind.

Carbon steel will react to anything acidic until it builds up some patina. It's easy to force a patina. Staining is normal for any non-stainless blade. Minor surface corrosion isn't an issue.
