I haven't had any issues with Wi-Fi Calling with the Eero Pro 6. The Deco M9 became unusable once we discovered that it blocked Wi-Fi Calling on our cells.

get the 3 routers only if you plan to hardwire backhaul. If you plan to do wireless backhaul, then get the extenders. Expect speed to be about half compared to a hardwire backhaul.
