Same with my pit boss, because it's a more expensive model with a PID controller. Not the same as the $150 home Depot off brand pellet grills, which swing wildly.

All pellet grills have temp swings because that's how the smoke is generated. Trust me 10-20 degree swings won't ruin your cook. I set my pit boss to about 200 and I can stay in that 200-225 range...

Good stuff. I've found that just smoke for the first 2-4 hrs is plenty on a well seasoned smoker. Everyone eats a different level of smoke they desire. Mine is on the lighter side.
