I wouldn't consider myself and expert by any means, but here's what I've come up with for taking care of cast iron. Heat to about 200 degrees. Paint canola oil on with a rag while it's still warm....

You don't know how to use cast iron then. It needs to be seasoned over time and almost develops a non-stick patina if you take care of it properly. You also can never leave it wet, you need to dry it...

You don't even realize how wrong you are, on each sentence/statement. I wouldn't consider cast iron "high maintenance" at all. Sure you have to prepare the cookware (ie. seasoning process)...

We leave a massive cast iron skillet on the stove all the time great for fying eggs sausage making quesadillas etc I just wipe it out with a paper towel and once in a while wipe it out with salt
