You don't season stainless steel pans, that's for cast iron cookware. You just don't crank the heat up to 11, then food won't stick.

It's a fry pan so it has a flat bottom. I think Cuisinart has a lifetime warranty so if you aren't able to return them you should be able to get them replaced under warranty.
