There can be controller issues can happen with even the new controllers. Pit boss will send you a new controller if you’re having issues.
Regardless of new vs old, there is a known air gap issue...

You can Google more info but the gist is they maintain a consistent temperature. The earlier pit bosses and other brands without a PID controller, tend to fluctuate temps all over the place.
