To add, there is also an option to disable the menu bar and from hiding in full-screen mode, which should alleviate the issue.

It already is "sort of" configurable. By default clicking the button goes to full screen. If you hold down the "Option" key while clicking, it will maximize as with older MacOS releases.

Many many users use Intel IGP's (7th gen and up) for Plex transcoding. It's pretty much the best way to transcode if you don't have access to a Nvidia GPU due to cost or form factor issues.

You can buy direct from Apple, $589 refurb, with their 1yr warranty, and AppleCare is available too. I'd rather pay the extra for the peace of mind.
