Tempted by the bourbon but it says "mellow smoky flavor". Seems like if I was choosing to use a bourbon pellet, I'd want a punchy flavor along with it.

Pellets do not work on a Kamado, they are made for pellet smokers. For a Kamado you want to use good quality charcoal and wood chunks if you want additional wood flavor.
