From my experience the shelling is messy when the ice water bath is not cold enough

The difference in peeling is mostly due to the added pressure and being cooked by steam. I do a batch of about 30 eggs which I then use for smoked deviled eggs. It's a bit of a stretch to cook 3-4...

Agree, I almost exclusively use the silicone basket linked earlier as it gives me the ability to lift solid out of the broth.
