IEEE recognizes CAT7 as does ISO. TIA does not.
There are plenty of valid CAT7 cables out there, but there are plenty of fakes too. Especially when you see 550mhz ones, they aren't up to spec.

Yes, a well made CAT5e cable is rated for up to 2.5Gbps. As a previous poster noted, it may go even higher, its just not certified for it.
