It took me a while to realize this was the key to "nonstick" cooking on cast iron and carbon steel. The mistake I kept making was using just a tiny bit of oil or butter like it was a nonstick pan.

pre-heat the pan, pour oil and swoosh it around, give in about 30 secs then crack in the eggs. Easy peasy.

They were coated with Bees Wax. Wash with warm water and dish detergent will remove it. Dry after washing so no oxidation begins.
