And the M2 mini at base 256gb has half the speed of the M1 Mini SSD. If you're like my wife that likes to have 30 browser tabs open at once, you will be swapping to that slow SSD with 8gb of ram.

That's incorrect, according to many Blackmagic Disk Speed Test results I've seen owners post. Not sure why you think the 512 models is 1 chip, maybe you saw someone who opened up a 512GB M2 Mac mini...
