Just sprinkle it on fried rice while you're making it, or in curry. It goes well with many things that would use cinnamon or "pumpkin spice". For example, banana bread or apple pie.

I tend to prefer things as close to their natural state, but to be fair, dried ginger is more potent (about 4x), more shelf stable, and likely cheaper and more convenient in most cases.

Not bad! But it still pales in comparison to the deal I scored a few months ago where I managed to find organic ground ginger at a ridiculous discount: $2.57/lb (after tax).
