That's not a limit, just what they tested before writing the manual. If your laptop specs are M.2 2280 NVME you're good to replace it with a modern 2TB model.

Yes, but just make sure to get the correct M.2 case for it. The Samsung SSDs are actually quite reliable and more suited for backups than the even cheaper SSDs.
