In this case the weight difference is not the issue, hydraulic brakes are so much more consistent than mechanical. It's a safety issue.

36t max in the rear, but you can run a gravel gearing set up on the front crank. I have a 46/30 front crank while it’s not as optimal as srams set up it works pretty darn well. I paid a lot more...

Neither kit comes with a chainring/crankset or rear cassette. So you can put anything you want. Just make sure your chain is compatible with the speed of your cassette.
