Junk disk brakes will out perform junk/average rim brakes and be more reliable. Mediocre hydraulic disk brakes will outperform even the best rim brakes.

I'm 6'2" and the largest size is my size. I'd say the largest size is perfect for someone 6'1". That's all I know.

Rim brakes are great. But the issue is that if your rim is slightly bent, rim would require truing which is very annoying.
Most people don't have the skill, time or money to tune up all the time.
