I can't speak to the quality of the plugs as I've never used a costco cord but in my experience the plugs are the cheap part to replace. If the jacketing and conductors are good, chop the stock ends...

Not likely.. Most RVs call for a 30 or 50 amp plug @ 120v this plug type only is good up to 20amp (i'd stop at 15 personally). Unless you mean FROM the RV to like stuff outside ( lights etc ) ,...

It is generally recommended to use one long extension cord instead of daisy chaining two shorter extension cords. Your cords are SJTW cords, which could be stiffer in really cold weather.
