You should be able to find rx5700xt's for under 150usd all day long. Not exactly a 1440p card but it's the best current value you can get. Be prepared to undervolt to try to keep the temps down.

It depends on what you want to play, and at what quality levels. I’ve had a 1440p monitor for over half a decade and get by just fine with a GTX 1060, which has similar performance to your RX 570.

Yes it would 1440p is half of 5k. 5k is the “native” resolution for Mac. Current mac resolution (since retina) renders at 5k, the halves the resolution to 1440p. The effect is crisper text etc. but...
