It also depends on what games you play. certain games with heavy rt and path training you won't be able to max the settings out with a 7900 xtx. But yeah the 7900 xtx is definitely the better value...

You're kinda pointing out the obvious but yes, if you don't need/want the additional features offered by NVIDIA, save some money and go with the AMD card.

Interested to hear why would you prefer the 4080 over the 7900xtx for a $2100 PC? I've owned both, and the recent 4080S, the only way I was able to have the 4080 win over the XTX was in RT.
