The drive inside is a WD180EDGZ-11BLDS0, 7200 rpm, unknown cache/buffer. There's no guarantee that they all have that model drive inside though.

I do not unfortunately but these are supposed to be white label WD red pro drives which are not helium seal from what I've seen. I would say they're certainly a bit louder than my HGST HC520 drives....

Yes, you can shuck them. I have shucked quite a few of these easystores. Depending on where you plan to put them into, you may need to tape over the 3.3v pin.
