What's your favorite Christmas cookie?

19,213 2,792 December 1, 2008 at 02:48 PM in Grocery
I'm always on the lookout for new recipies - what is your family's favorite Christmas cookie?

My family goes nuts over spritz. I'm only allowed to make trees and the flower with a red hot in the center. I do a batch with splenda for my mom and call them Festivus cookies. Coverlaugh

I use an electric press for these. I'd be lost without it - I probably make 6 batches over Christmas.

Joy of Cooking Spritz

Makes about 5 dozen 2" cookies

Beat on medium speed until very fluffy and well blended:

1/2 lb (2 sticks) unsalted butter, softened
3/4 cup sugar

Add and beat until well combined:

2 large egg yolks
1/4 tsp salt
1 1/2 tsp vanilla
3/4 tsp almond extract

Sift over the top and stir in until well blended and smooth:

2 1/4 cups all purpose flour

To press the cookies:

If the dough seems soft and difficult to handle, stir in 1 to 2 tbs flour. Cover and refrigerate until slightly stiff but not at all hard, 30-40 minutes.

Position a rack in the upper third of the oven. Preheat to 350.

Press out the cookies leaving about an inch between them. Decorate as desired and bake 1 sheet at a time for 9-12 minutes. Remove the pan and let stand for a few minutes before removing cookies to a rack to cool.

i used to be in this christmas cookie exchange with some other women in my group. we used to make like 2 dozen of cookies, meet at the park and lay it out on the table. then we'd walk around with our plates and grab 2-3 of each. very festive looking cookies.

I have an exchange at work, too. That's where the recipe above came from. A desire to kick some old lady butt at cookie baking. Wink

Those trees are so cute, are they hard to make?

We had a co-worker whos hygiene standards were questionable. So we always had to find out which dish they brought before we made our plates up. Sick

Not hard at all. I use an electric press by Wilton [amazon.com]. FIL says if it ever breaks I'm to let him know immediately so he can replace it. Coverlaugh Once you get the rhythm down it's a piece of cake. I usually end up with at least one tray of naked cookies (no sprinkles) because it goes so quick.

here is another one I do
http://www.cooks.com/rec/view/0,1...07,00.html

I used to send them to the teachers at my sons school..but now our school is nut free so I can't send in cookies...I still hear from some of the teachers that were able to get some, that mine were still the best they had ever gotten..I love baking, not so much cooking.

I have the press I inherited from one of my mom's friends, but I have yet to make the spritz cookies. I always have to make tons of cookies and send my mom batches of them so she can serve them at Christmas. laugh out loud I make Bycracky bars, peanut butter cookies and sugar cookies (for my dad), my mom wants puppy chow this year too, candy cane cookies, plus a few others that are escaping me at the moment. Oh, and I always make Stollen and at least 1 or 2 new cookies to try out. Then of course cinnamon rolls from scratch on Christmas morning. Licklips
