The gist of FiberGourmet is basically that they replace starch with a modified starch that isn't broken down by the body thereby reducing calories and increasing fiber intake while still giving you the pasta (or cracker) experience you want. For those who love pasta but are trying to reduce carb/calorie intake, this is a great product to enjoy occasionally. Too pricey for everyday use, and you can tell that it's a little more chewy than traditional pasta, but I like the texture a lot.
