Santokus are were designed to be multi-purpose knife for Japanese home cooks, in a way it's the Japanese version of western style knife. But you weren't supposed the "rock" the knife.
Traditional Japanese knives on are made with a single purpose such as cutting up poultry or slicing fish. You typically do everything in a slicing motion because of the way the knives are designed
Unlike Western knives there's left or right handed version of japanese knives due to the edge being biased toward one side. Which is anywhere from 70/30 to 90/10 edge, Western knives are 50/50. Japanese knives are are also thinner at the edge, use a higher hardness level and require more finesse from the user because you don't rely on the weight of knife like you do with western knives.
