Yes. You can use it for anything you want: storage, NAS, backups, a boot drive (although I'd recommend an SSD for that). I wouldn't consider it 'overkill' for any of the above, maybe for backups but that's a matter of opinion and will depend on your setup.

What you're paying for is moderately improved reliability and a lower failure rate vs. blue drives, although your own results may vary. If the data you're storing is critical, then go with a red and back it up regularly. If your data is accessed regularly or used to serve media to other devices, a red would probably be the better of two. Otherwise you can probably take a gamble with a blue, if the data isn't accessed often for example.

If you don't care about the potential for needing the warranty, then yes. Shucking tends to be cheaper
