From a manufacturing process stance, it seems like they grind down the chickens and turn it into a slurry. Each piece is uniform in size, texture, and taste and they come in these thin tiny squares. Really strange.
I don't eat a lot of jerky, but every other month or so I pick up a different type of Perky Jerky for trips. You cannot compare the two and while PJ does have it's bad bags (almost total throw-outs) you appear to have real protein.

Not me. Never tired these before but for $7 thought it was worth the try as well.
Cooking Jerky? Interesting though, but I doubt this brand would taste good cooked since they already have a higher water content due to the slurry manufacturing. I had no idea what soyLenT Green's were, but it seems like a cracker? Those seem huge in compared to these bites as they were about 1x1x0.25" in size.
Like I mentioned, it seems like they created a slurry of juice + ground up chicken that dried into long sheets that was chopped into small cubes.
